WHO IS THIS COURSE FOR?

This course is for those of you with a love of Italian food and a wish to make Italian staples such as pasta and gnocchi from scratch. Wild food is still very much part of Italian food and culture and our wild produce works so well in Italian dishes. We will use seasonal wild greens and local fish and game to create authentic Italian dishes.

COURSE OUTLINE:

This course is for those of you with a love of Italian food and a wish to make Italian staples such as pasta and gnocchi from scratch. Wild food is still very much part of Italian food and culture and our wild produce works so well in Italian dishes. We will use seasonal wild greens and local fish and game to create authentic Italian dishes.

On this course you will learn some of the following:

  • Make fresh pasta for ravioli & tortellini with fillings of nettle & ricotta, sea beet & ricotta, hare/rabbit
  • Make gnocchi with wild garlic or three cornered leek
  • Make a frittata with nettle & sorrel
  • Make a nettle rotolo with wild greens
  • Make a risotto with alexanders or rock samphire & wild fennel
  • Make a salsa verde using rock samphire, black mustard and wild apple mint, served with mackerel
  • Make a wild garlic & nettle pesto for pasta

EXAMPLES OF DISHES YOU MAY LEARN TO COOK ON A WILD ITALIAN COOKERY DAY:

  • Three cornered leek gnocchi
  • Nettle & ricotta tortellini
  • Alexanders risotto
  • Hare ragu
  • Hare ravioli
  • Wild salsa verde
  • Wild garlic & nettle pesto
  • Nettle & sorrel frittata
  • Wild mushroom risotto
  • Polenta with wild mushrooms
  • Nettle rotolo with wild greens

WHAT IS INCLUDED IN THE COURSE?

Tea/coffee & refreshments, a glass of wine with lunch, 3 course lunch, e-mail recipe pack.

WHAT SHOULD YOU BRING?

A bottle of water, waterproof clothing, walking shoes/boots or wellies, pen & notebook, camera, bag or basket to take home foraged ingredients.
